My Chi only mated once does this mean she will have only one puppy if she is preg? Or do they need to breed more than once?

She may have 4 with one breeding. I breed 3 times just to be sure I caught her on her most fertile days.

This all depends on the lines the females are out of as well as the size. Some females with carry 2 or 3 others 6 or 7.
